unfortunately there is no function key alternative for receiving a fax manually in WinFax. There are some programs that allow you to define function keys for specific commands in programs, but I am not sure if these would work with WinFax. The only alternative would be to develop a program which would initiate the Manual Receive request when a Function key was pressed. This can be done using DDE or the SDK.
